As much as I am a carnivore, sometimes you need a little balance. A hearty spinach salad is always nice change of pace for me. Of course, for those of you who need convincing, a warm bacon vinaigrette and maple glazed walnuts in the salad is usually enough to get even the most salad averse folks to take a serving. The walnuts can be made ahead of time as can the vinaigrette. Just warm the vinaigrette up right before you dress the salad and then serve immediately.
