A Facebook friend of mine recently mentioned how her zucchini plant was so prolific that her neighbors had politely come over to tell her to stop giving them more zucchini. They couldn’t use it up fast enough. How I wish I had a neighbor like that! I adore zucchini and summer squash, though I know a lot of people find it a bit of a bland vegetable. If anything can change their mind though, it’s this summer squash au gratin. Layering cheese and cream along with the zucchini, yellow squash and onions into Anolon’s 3-Quart Au Gratin baking dish, this is the sort of easy side dish that has people clamoring for more. also jealous of zucchini-giving neighbors. while i’m grateful for the lemons one of my neighbors is happy to let me have, it’s harder (maybe even impossible?) to make a satisfying dish starring lemons.
