If you’ve been following along on my blog, you’ll know that last summer my partner and I took an epic roadtrip across the country, hitting 23 states, 13 National, State and Native American Parks and logged over 10,000+ miles on our car. We were gone for 7 weeks and it was pretty fantastic. We talked about how we could hit the road again this summer, we had such a blast last year, but with all the work needed on my cookbook manuscript, I didn’t think it was possible. But, with some schedule juggling, AJ and I are doing a truncated mini Summer road trip! Three weeks on the road, camping and visiting the state of Utah and Colorado. If you don’t follow me on Instagram or Twitter you can check out where I’m at, as I’ll be sharing all the beautiful sights that we encounter…as long as we have cell signal that is. This year our hashtag is #OnTheRoad2014 and you can also follow along with AJ’s Instagram feed if you’d like! In the meanwhile I have a few blog posts scheduled for when I’m gone, including a great giveaway later this week! Keep an eye out for that along with a fab summer vegetable recipe and a great jam recipe coming up in the weeks following. Until then, see you when I get back!

Welcome back to Utah! If you make it as far North as Cache Valley, let me know, I’ll give you restaurant recommendations that don’t suck (it’s more of a challenge here than you might think)
