These luscious rosemary garlic olive oil mashed potatoes make any meal special!
My friend Rita is obsessed with mashed potatoes. I’ve never seen her turn down a side order of mashed potatoes if they are on a restaurant menu. If it were up to her, she’d probably be happy eating them every single day for each meal. Though I don’t have her absolute devotion to mashed potatoes, they are a definite comfort food that I can appreciate. So when my I decided to make them for my next Anolon Thanksgiving recipe, I knew I had to make them special. The result, rosemary garlic olive oil mashed potatoes are pretty spectacular. Garlicky without being overbearing and autumnally herbaceous from the rosemary without being overpoweringly woodsy, these are the mashed potatoes that I can eat all the time.
