My tiny apartment in San Francisco has a lot going for it, even though it’s insanely small. I live in a great neighborhood, I have rent control and I get tons of light. But one of the best things about it is the exceedingly prolific lemon tree that we have in the backyard. This means an endless supply of lemons. But that also means I need to know how to juice a lemon properly! When I’m juicing lemons, I place my lemon in the microwave for 15 seconds to help get more liquid out of them. Just be careful that you don’t over microwave the lemon, as the inside juices can scald you! And while you’re at it, don’t forget to zest the lemon and add that to your dish. Lemon juice adds acidity (which helps brighten up both savory and sweet dishes) but if you want to just add lemon flavor, lemon zest is the best way to do that without messing with the acidity or liquid ratios of the final product!

Excellent tip! I cook professionally and I didn’t even know that. But then again, most professional kitchens don’t have microwaves lol. Would it work just as well in an oven?

I don’t know. It might take too long to heat up in an oven for the tip to be of any use, but if you try it, let me know how it turns out. Just don’t forget the lemon in the oven!
