I’m usually a traditionalist when it comes to Christmas dinner, serving turkey or ham as my main course. But sometimes you want something special, and nothing says celebratory Christmas more than a roast goose. The idea of roasting a goose is probably daunting for most people, but it’s actually not anymore difficult than roasting another large piece of meat. The key is to pierce the skin all over with a sharp knife or needle to allow the layer of fat under the skin to render out. The added bonus is the large amount of goose fat that you get which is pure liquid gold. Roasted potatoes or vegetables with goose fat is pretty spectacular!
