This refreshing twist on the classic Kahlúa Mudslide frozen cocktail will cool you down no matter where you are this summer!
To be honest, summer in San Francisco is not my favorite time of year. Though I look forward to summer because my partner AJ is off of work (he’s a professor at a community college) summertime is when the tourists come in…and when the temperature drops and the fog starts to rolling in. Though a small part of me giggles whenever I see tourists walking around in shorts shivering as they expect vacation in California to be warm and sunny, most of the time I stay indoors, avoid the crowds and put my nose the grindstone to get work done. But every now and then I try to shake things up a bit and break out of my usual routine. So when Kahlúa approached me to partner together on their Summer Shake-Up campaign, I jumped at the chance. I’ve been a fan of their coffee and rum liqueur, using it in cocktails and baking. So with this collaboration in mind, this summer I decided I needed to start getting out more of the house, and celebrating San Francisco for what it is.
Truth be told, when I think about it, June is pretty awesome in San Francisco. Sure the weather is inconsistent; one day it’s 85˚ (a temperature that all of SF deems EXCEEDINGLY too hot) while the following day will drop to 65˚F (a temperature that all of SF deems EXCEEDINGLY too cold). But free concerts are available every weekend, literary and art festivals seem to be happening nearly daily, and one of the largest street parades in the California punctuates the end of the month. This year, I’m going to be getting out of my house more, away from the computer and celebrate all that my city has to offer. Thanks Kahlúa for inspiring me to get out of my comfort zone a bit. Of course, I’ll still be carrying around a light sweater, just in case.

Kahlúa Coconut Mudslide

The traditional Kahlúa mudslide recipe is fairly straightforward. 1 part Kahlúa, 1 part ABSOLUT® vodka, 1/2 part Irish cream, 1 part vanilla ice cream. Add ice and blend until frothy and delicious. Drizzle some chocolate syrup in the glass and pour to your heart’s content. In the spirit of their Summer Shake-Up campaign, I decided to create a dairy-free coconut mudslide using a dairy-free coconut frozen ice cream as well as making my own chocolate syrup. Certainly you can skip the chocolate syrup or use a store bought one, but trust me when I tell you the coconut chocolate syrup takes barely 5 minutes to make and is worth the minimal effort. You’ll have leftovers, so use it to drizzle over sundaes and cheesecake. I’m kind of obsessed with it actually!
Coconut Chocolate Syrup
1/2 cup natural cocoa powder (not Dutch-process)
1/2 cup white granulated sugar
1/2 cup coconut milk
1 tablespoon Kahlúa
Toasted Coconut garnish
1/4 cup grated unsweetened coconut
Kahlúa Coconut Mudslide
1 cup Kahlúa
1/2 cup ABSOLUT® vodka
1/4 cup Jameson Irish Whiskey
1/4 cup coconut milk
1 pint Dairy-Free Coconut Milk Vanilla Ice Cream
1 standard tray of ice cubes
1. Make the coconut chocolate syrup by placing the cocoa, sugar and coconut milk in a medium pot. Cook over medium-high heat, stirring constantly, until the syrup starts to thicken, about 2-3 minutes. Remove from heat and stir in the Kahlua. The syrup will thicken as it cools.
2. Toast the coconut by placing it in a sauté pan and turning the heat to medium high. Stir constantly until the coconut starts to brown and smell fragrant (about 2-3 minutes). Remove from heat.
3. Make the coconut mudslide by placing all the ingredients in a blender. Blend until the ice is crushed and the drink is frothy. Assemble the drink by first drizzling the coconut chocolate syrup around the side of the glass. Pour the mudslide into the glass and sprinkle some toasted coconut on top.
Makes 2 “big boy” drinks or 4 “fun-size” drinks.
