This southern-inspired deviled eggs use homemade pimiento cheese, which is a mix of cheddar, pepper jack and cream cheese, along with mayonnaise, mustard and chopped pimiento peppers in the filling. They’re a total crowd pleaser and perfect for any outdoor gathering or potluck. If you don’t like Pepperjack cheese, or are adverse to spicy foods, just omit the pepperjack and increase the cheddar to 4 ounces.

Ingredients
6hardboiled eggs
2ouncesgrated sharp Cheddar cheese
2ouncesgrated Pepperjack cheese
1/4cupcream cheeseabout 2 ounces
1/4cupmayonnaise
2tablespoonsDijon mustard
2tablespoonschopped pimiento peppers2 ounces
1/2teaspoonkosher salt
1/2teaspoonblack pepper
To Garnish
chiveschopped

Instructions
Peel and cut the hard-boiled eggs in half lengthwise.
Place the Cheddar, Pepperjack, cream cheese, mayonnaise, mustard, pimiento peppers, salt and pepper in the bowl of a food processor. Process until combined.
Scoop out of the egg yolks from the eggs and place yolks in the food processor. Process again until smooth. Place egg white shells on a serving platter.
Scoop the filling into a frosting piping bag fitted with a circular tip. Pipe the filing into the egg white shells. You can also fill the egg whites with the filling with a spoon if you want. Garnish the top with chopped chives, some extra pimiento peppers and extra salt and pepper. Serve immediately.
