This rabbit stew with root vegetables is perfect for a cold winter dinner!

When she was a child, my partner’s mom ate some rabbit and declared to the person who served it that “This is the best chicken I’ve ever eaten!” When she was told it was rabbit, she panicked and dropped the food onto her plate and refused to eat any more. Which is a shame because rabbit is pretty awesome. Though it sounds intimidating to make, if you get it from the butcher at an upscale grocery store, you can ask them to cut the rabbit up for you, making it much easier to use. Even if you can’t, just search online for instructions on how to butcher a rabbit and you’ll find it’s not too hard. Merry Christmas Eve!! I wish I would have had this recipe when my Hubby was hunting. Years ago he would hunt for rabbit, pheasant, quail, etc. and he’ give the meat to his mom. His dad loved the wild game — I had no clue how to cook it. Now my mamma would have known bur she and my papà were several states away. It would be a great challenge to see what kind of dishes I could come up with. I will save your recipe just in case we do find the rabbit meat. It really sounds delicious.

It’s a bit difficult to find rabbit in the US, and that’s too bad because it is indeed very good. We’re more accustomed to eating it in France. I’m keeping your recipe to try next time I find some!
